PASTURED BEEF

We have found that the best system for our farm involves raising the bull calves from our dairy herd for beef. Each steer is given individual attention throughout its life and never receives preventative antibiotics. We supplement our steers’ diets with hand-fed grain in the first year and a small amount of corn silage throughout their life. This gives our beef excellent marbling and great taste.

Ground Beef & Sausage

  • Choice Ground Beef | $8/lb | Sold in 1 lb packages (~$8 each)
    Makes juicy burgers.
  • Breakfast Sausage Links | $12/lb | Six sausages per package (~$15 per package)
    These lean, all-beef breakfast sausages are preservative- and sugar-free with just enough spice. Great as a pizza topping.

Premium Steaks

  • Porterhouse | $17/lb | Typically 1-2 lb steaks (~$25 each)
    Well-marbled, prime cut thick steak with the bone in. The classic steak.
  • Ribeye | $16/lb | Typically less than a pound (~$12 each)
    Prime cut thick steak (bone-in). The best for grilling.
  • T-Bone | $16/lb | Typically about a lb (~$16 each)
    Prime cut thick steak with the bone in. A customer favorite.
  • Mini Tenderloin | $24.50/lb | Typically 1/4 lb (~$6 each)
    These mini steaks are a special treat. They melt like butter in your mouth.

Steaks

  • Chuck Steaks | $9/lb | Typically 1 1/4 lbs (~$11.25 each)
    A thick boneless steak. These cuts are a more economical, but tasty choice. Cook them in a frying pan or on the grill.
  • Boneless Sirloin | $10.50/lb | Typically 1 lb (~$10.50 each)
    A thick lean, boneless steak. Great on the grill or in stir fry.

Specialty Cuts

  • Skirt Steak | $11/lb | Typically 1 lb (~$11 each)
    Thin rolled steak. Great in fajitas.
  • Flank steak | $12.50/lb | Typically 3-4 lb (~$50 each)
    A very popular, tasty steak. Cut on the diagonal.

Roasts

  • Top & Bottom Round | $9/lb | Typically 2-3 lb (~$25 each)
    A lean but juicy roast. Great for slicing for sandwiches.
  • Brisket Halves | $9.50/lb | Typically 5-6 lb (~$52 each)
    Great corned or oven-baked.

Stew & Soup

  • Lean Stew Meat | $8.50/lb | Typically 1 lb (~$8.50 each)
    Lean beef cut into cubes. Just throw it in the pot for an easy, delicious stew.
  • Shank Slice with Meat & Marrow | $6.50/lb | Typically 3/4 lb (~$4.88 each)
    Sear first and use in your favorite soup recipe.
  • Meaty Soup Bones | $4.50/lb | Typically 1 1/4 lb (~$5.85 each)
    Use them to make a nutritious soup broth.

    The choice for a tasty stew.
